how do you get to pitch like that, and also, is there a place I can learn to do shir like you just did?

You set the play mode from polyphonic to one of the monophonic modes. The one I use is mono single trigger with fingered portamento. Then you set the portamento up to a few hundred milliseconds.

I don't really have a definitive source to point to for how to learn it.
